Breakfast pizza with peppers and onions

Ingredients

  • 1 Pizza Crust
  • Approximately 8 Eggs scrambled until slightly underdone.
  • Salt & Pepper
  • Sliced Red and Green Bell Peppers
  • Sliced Red Onion
  • Oil to saute vegetables
  • Option: cooked breakfast sausage or cooked bacon (crumbled)

Instructions

  1. Cook pizza crust according to directions to a light golden brown.
  2. Preheat the Oven to 350 degrees
  3. Place oil in a skillet and saute the strips of bell pepper and onion until tender. Set aside.
  4. Scramble eggs with salt and pepper to taste until they're firm enough to hold together but are still slightly under-cooked and a little wet/shiny looking on the surface.
  5. Distribute the scrambled eggs evenly over the crust, then distribute the sauteed vegetables over the eggs.
  6. Sprinkle grated cheese over the top of the pizza.
  7. Put breakfast pizza in the 350 degree oven until the cheese is nicely melted - approximately 9 to 10 minutes.
