Chicken Tortellini Soup Recipe
Chicken broth soup with tortellini pasta, carrots, celery and onions
Ingredients
- 1 cup chicken breast meat, diced
- 1 tablespoon butter or margarine
- 2/3 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 5 chicken bouillon cubes
- 5 1/2 cups hot water
- 1 tablespoon parsley
- 1/4 teaspoon ground thyme
- 1/4 teaspoon garlic powder
- salt
- white pepper
- 1/2 pound tortellini, cooked according to package directions
Instructions
- In a large pot, melt butter.
- Add carrots and saute 3-4 minutes.
- Add in diced chicken and cook another 5 minutes until chicken is fully cooked.
- Add celery and onions and continue to saute 7-8 minutes until vegetables are tender and onions are translucent.
- In a separate bowl, dissolve chicken bouillon cubes in hot water.
- Pour into pot.
- Add all of the remaining ingredients (except for tortellini). Simmer on medium-low for 20 minutes. Salt and pepper to taste.
- While the soup is simmering, cook tortellini (in a separate pot) according to package directions. Drain water.
- After the soup has cooked for 20 minutes, add in the tortellini and stir.
