Cucumber Salad Recipe
Cucumber salad with vinegar and onions
Ingredients
- 1 qt water, hot
- 1 qt water, cold
- 1/2 gallon cider vinegar
- 6 lbs sugar
- 1/2 oz cracked black pepper
- 8 lbs cucumber, sliced
- 1 lb red onion, sliced
Instructions
- Score the cucumbers with a fork.
- Dissolve sugar in hot water.
- Once completely dissolved add the remaining ingredients and chill to less than 41 degrees.
- Cut cucumbers and onions.
- Add the dressing to the salad at least 1 hour before serving.
- Completely cover cucumbers and onions with liquid. When serving fill 1/2 full with dressing.
