Cucumber Melon Salad Recipe
Cucumbers, cantaloupe, and honeydew salad
Ingredients
- 1 cantaloupe, peeled and seeded
- 1 small honeydew, peeled and seeded
- 2 cucumbers, peeled and seeded
- 1 small red onion, thinly sliced
- 1 teaspoon salt, or to taste
- 1 teaspoon ground black pepper (or to taste)
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- About 12 mint leaves, chopped
Instructions
- Peel and seed melons and cucumbers, and slice as thin as you would like.
- Slice red onions thinly.
- In a bowl, whisk together salt, pepper, balsamic vinegar and olive oil.
- Stir in chopped fresh mint leaves, and chill for one hour or more.
- Arrange fruit on 6 plates, and drizzle with dressing.
