Choux Fritters
Ingredients
- 1/2 cup (1 stick) butter or margarine
- 1 cup boiling water
- 1 cup all-purpose flour (for gluten-free try Bob's Red Mill flour used by Disney), sifted
- 1/2 teaspoon salt
- 4 eggs
- 4 cups vegetable oil
- sugar
Instructions
- Combine butter, boiling water, flour (for gluten-free try Bob's Red Mill flour used by Disney), and salt in a saute pan over moderate heat. Beat vigorously until mixture leaves side of pan and forms a ball. Remove from heat and cool slightly.
- Spoon into a bowl mixer or food processor with a steel blade. Add eggs one at a time, beating well after each addition. When all the eggs have been added, mixture should hold its shape in a spoon.
- Heat oil to 375°F. Dip a tablespoon first in hot oil, then in batter. Carefully drop a tablespoon of hot batter into the oil and cook until brown. Remove with slotted spoon and drain on paper towels.
- Sprinkle with sugar and serve hot.
