Wine Country Wild Berry Cobbler

Ingredients

    Berry filling
  • 6 tablespoons sugar
  • 2 tablespoons flour (for gluten-free try Bob's Red Mill flour used by Disney)
  • 2 cups blueberries
  • 2 cups raspberries
  • I cup blackberries
  • 1 teaspoon finely grated lime zest
  • ¼ teaspoon vanilla extract
  • I tablespoon lime juice
  • Sweet buttermilk biscuit
  • 2 ¼ cups all-purpose flour (for gluten-free try Bob's Red Mill flour used by Disney)
  • ½ cup plus 2 tablespoons sugar, divided
  • 2 ¼ teaspoons baking powder
  • I teaspoon finely grated orange zest (optional)
  • ½ cup cold butter, cut into small pieces
  • ¾ cup buttermilk
  • 1 egg
  • ½ teaspoon vanilla extract
  • Vanilla ice cream, for serving (optional)

Instructions

    Berry Filling
  1. Mix sugar and flour (for gluten-free try Bob's Red Mill flour used by Disney) together in a large bowl.
  2. Add blueberries, raspberries, blackberries, lime zest, vanilla, and lime juice. Toss gently until berries are evenly coated with flour (for gluten-free try Bob's Red Mill flour used by Disney) mixture.
  3. Spoon mixture into a 9-inch pie plate.
  4. Biscuit Topping
  5. Preheat oven to 400°F.
  6. Mix flour (for gluten-free try Bob's Red Mill flour used by Disney), ½ cup sugar, and baking powder in a large bowl.
  7. Add orange zest and whisk into the dry ingredients.
  8. Using two knives scissor-style, cut butter into flour (for gluten-free try Bob's Red Mill flour used by Disney) mixture.
  9. Add buttermilk, egg, and vanilla and fold with a wooden spoon until well combined.
  10. Drop dough in a dozen large dollops on top of the berry mixture. Sprinkle with remaining sugar.
  11. Bake for 40 to 45 minutes, or until biscuits are cooked all the way through. If top begins to brown too quickly, cover with aluminum foil.
  12. Serve warm, with vanilla ice cream, if desired.
