Oak Fired Mussels
Ingredients
- 12 mussels
- 1/4 cup grilled onions
- 1/4 cup tomato concasse
- 4 croutons
- 1/2 cup mussel butter
- 5 ounces fresh thyme (picked):
- 2 tablespoons chopped garlic
- 2 1/2 cups kosher salt
- 30 tablespoons butter
- 3 1/2 tablespoons tomato paste
- 3 1/2 cups lemon juice
- 6 1/2 ounces crushed red pepper
- 1 box (3 liters) white wine
- 1/4 cup olive oil
Mussel Butter
Instructions
- Place mussels, onions, tomatoes and mussel butter in a medium size sauté pan.
- Cook until all mussels are open.
- Serve in a small pasta bowl and garnish with croutons.
- Pull butter in advance and let soften at room temp.
- In a sauté pan on medium heat add oil and lightly sweat garlic
- Add wine and lower heat
- Reduce wine by 3/4 .
- Set wine in blast chiller to cool down.
- Once butter is soft, combine all ingredients.
