Mixed Greens Salad Recipe
Salad with candied walnuts and cherry vinaigrette
Ingredients
- 2 cups water
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup shelled walnuts, halved
- Oil for deep frying
- 1/8 tsp coarse salt
- 1/8 tsp cayenne pepper
- 1 tbsp dried cherries
- 1 tbsp maraschino cherry juice
- 1/2 tbsp red wine
- 1/8 cup red wine vinegar
- 1/8 cup orange juice
- 1/4 shallot, peeled and quartered
- 1/4 cup olive oil
- 1 pinch coarse salt
- 4 cups mixed baby greens
- 3 tbsp dried cherries
- coarse salt
- ground black pepper
- 1 small pear, cored and thinly sliced
- 3/4 cup crumbled Gorgonzola

Instructions
- Simmer water, sugar, vanilla on medium.
- Add nuts; cook 15-20 minutes.
- Put nuts on parchment paper in one layer.
- Heat oil to 350F.
- Add a few nuts. Let foam subside; add more. Fry 2 minutes. Toss with salt, pepper.
- Simmer juices, cherries, wine, vinegar, shallots on low 10-15 minutes. Let cool.
- Puree until smooth. With machine on high, slowly add oil until emulsified. Season with salt.
