Chocolate Mousse
Ingredients
- 4½ ounces Semi-Sweet Chocolate
- 1/3 cup Butter, broke into pieces
- 2 Egg Yolks
- 3 Egg Whites
- 1½ Tablespoons Granulated Sugar
Instructions
- Melt the chocolate in a double boiler.
- Remove from heat and add the butter, stirring with a wooden spoon.
- Add the egg yolks and mix in. Allow the mixture to cool completely.
- Beat the egg whites until very stiff; halfway through, add the sugar.
- Fold the egg whites into the chocolate mixture, beginning with a handful to soften the chocolate. Gently fold in the remainder with a spatula.
- Place in a dish and refrigerate for at least 2 hours to set.
- Garnish as desired.
