Caramel Pecan Bars
Ingredients
- 1 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups all-purpose flour (for gluten-free try Bob's Red Mill flour used by Disney)
- 1 (4.51-ounce) bag Werther’s Original Soft Caramels, unwrapped
- 1 (14-ounce) can sweetened condensed milk
- 1/2 Cup chopped pecans
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line an ungreased 9" x 13" baking dish with parchment paper and set aside.
- In the bow] of a stand mixer, add butter, sugar, and salt. Using the flat beater attachment, cream together well. Add flour slowly and mix until well combined. Press two-thirds of dough into the prepared baking dish, reserving the remaining dough.
- In a medium microwave-safe bowl, add caramels and milk. Microwave on high for 1 1/2 minutes. Stir and microwave an additional 1 minute until caramels are melted. Stir in pecans and vanilla.
- Pour caramel sauce over dough in pan. Scatter flattened pieces, about 1" in diameter each, of remaining dough across the top.
- Bake until edges are bubbling and golden brown, about 25 minutes. Allow to cool completely, about 1 hour, before cutting into bars. Cover and store in the refrigerator up to 7 days.
