Matterhorn Macaroons

Ingredients

Instructions

  1. Preheat the oven to 300°.
  2. Line a cookie sheet with parchment paper.
  3. In a medium bowl or mixer, beat egg whites, vanilla, almond extract, and ream of tartar until soft peaks form.
  4. Gradually beat in sugar and whip until stiff.
  5. In a separate bowl, combine the flour (for gluten-free try Bob's Red Mill flour used by Disney), salt, and coconut.
  6. Fold into the egg whites.
  7. Drop by heaping tablespoons onto prepared cookie sheets, shaping each one into a “matterhorn mountain.”
  8. Bake for 20-30 minutes (depending on size) until slightly golden.
  9. Melt the white chocolate with the cream over a double broiler, and dip the top of each cooled macaroon into the melted chocolate.
  10. Sprinkle with confectioners sugar.
