Yield: 9 inch pie

Scottish Banoffee Pie

Dessert pie made from bananas and cream in a chocolate cookie crust

Ingredients

  • 1 Stick Unsalted Butter
  • 1/2 Cup Packed Dark Brown Sugar
  • 1 (14 Ounce) Can Sweetened Condensed Milk
  • Favorite Pre-Made 9-Inch Chocolate Cookie Crust
  • 2-3 Bananas
  • 1 1/2 Cups Heavy Cream
  • 2 Teaspoons Sugar

Instructions

  1. Melt butter in a small saute pan over medium heat.
  2. Add brown sugar and stir until melted and combined.
  3. Add condensed milk and bring mixture to a simmer for a few minutes, stirring continuously.
  4. The mixture should darken and thicken slightly.
  5. Pour filling into crust.
  6. Cool to room temperature and refrigerate for at least 1 hour until filling is firm.
  7. Slice bananas and place on top of filling in a single layer, covering filling completely.
  8. Whip cream with sugar until medium peaks form.
  9. Spread whipped cream on top of bananas.
