Jasmine Cashew Rice Recipe
Jasmine rice with vegetable stock
Ingredients
- 4 cups vegetable stock
- 2 cups jasmine rice
- 1/2 cup cashews
- 1/4 cup fresh chives
- 1/4 cup minced ginger
- 4 tbsp olive oil
- kosher salt to taste
Instructions
- In a pan, bring stock to a boil and then add rice. Cook according to directions.
- When rice is done, fold in the cashew, chives, minced ginger and olive oil.
- Season to taste with salt and pepper.
