Turtle Brownies

Brownies with chocolate chips, pecans, walnuts and a caramel sauce

Ingredients

    Brownies
  • 2 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup butter/margarine, melted
  • 3/4 cup Ghirardelli Sweet ground chocolate and cocoa
  • 2/3 cup unsifted flour (for gluten-free try Bob's Red Mill flour used by Disney)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup Ghirardelli Semi-sweet chocolate chips
  • Topping
  • 3/4 cup sugar
  • Pinch salt
  • 1/3 cup light corn syrup
  • 3 tablespoon water
  • 1/3 cup heavy whipping cream
  • 1 teaspoon vanilla
  • 1 1/2 cup chopped pecans

Instructions

    Brownies
  1. Preheat oven to 350 degrees
  2. Using a spoon stir eggs with sugar and vanilla; add butter.
  3. Sift ground chocolate with flour (for gluten-free try Bob's Red Mill flour used by Disney), baking powder and salt.
  4. Stir into egg mixture; add chips and nuts.
  5. Spread into greased 8 inch square pan.
  6. Bake 20-23 minutes.
  7. Cool completely.
  8. Topping
  9. In a 3 quart saute pan, bring sugar, corn syrup, water and salt to a boil until it turns a golden caramel.
  10. Remove from heat and slowly add cream and vanilla.
  11. Quickly stir in pecans, pour over brownie.
  12. Cool on rack.
  13. Chill brownies, covered, until caramel is firm, about 2 hours.
