Piggylicious Bacon Cupcakes

Bacon cupcakes with a maple frosting and pretzel topping

Ingredients

    Cupcakes
  • One box yellow cake mix
  • Enough bacon fat to replace the canola oil (as called for on the box recipe)
  • Water (as called for on the box recipe)
  • Eggs (as called for on the box recipe)
  • 6 oz. cooked crispy bacon
  • Maple Cream Cheese Icing
  • 8 oz. cream cheese
  • 1/4 cup butter, softened
  • 2 tsp. maple flavoring
  • 16 oz. (about 4 cups) powdered sugar
  • 1 small bag of pretzel twists

Instructions

    Cupcakes
  1. Put cake mix in a bowl.
  2. Add bacon fat, water, and eggs.
  3. Beat ingredients with a hand mixer according to the package directions.
  4. Fold in the cooked bacon.
  5. Add mixture to cupcake pan and bake according to package directions.
  6. Maple Cream Cheese Icing
  7. In a mixing bowl with a paddle attachment, cream together the cream cheese and butter until light and fluffy, about 8 minutes.
  8. Add maple flavor until combined.
  9. Add powdered sugar until well mixed.
  10. Frost each cupcake with the frosting, and garnish with crushed pretzel twists.
