Yield: 15-20 servings

Cucumber Salad

Cucumber salad with vinegar and onions

Ingredients

  • 1 qt water, hot
  • 1 qt water, cold
  • 1/2 gallon cider vinegar
  • 6 lbs sugar
  • 1/2 oz cracked black pepper
  • 8 lbs cucumber, sliced
  • 1 lb red onion, sliced

Instructions

  1. Score the cucumbers with a fork.
  2. Dissolve sugar in hot water.
  3. Once completely dissolved add the remaining ingredients and chill to less than 41 degrees.
  4. Cut cucumbers and onions.
  5. Add the dressing to the salad at least 1 hour before serving.
  6. Completely cover cucumbers and onions with liquid. When serving fill 1/2 full with dressing.
